Bresaola is air-dried, salted grass fed beef that has been aged for two or three months until it becomesa medium to dark red, almost purple colour. It is made from top (inside) round or better known as topside and also from silverside, and is lean and tender, with a sweet, musty aroma. It originated in Valtellina, a valley in the Alps of northern Italy’s Lombardy region.
