Roast Rolled Turkey Breast with Apple and Sage Stuffing
Ingredients:
- Rolled Turkey Breast (ours was 2.7kg)
- Salt
- Pepper
- Olive Oil
- 4 Apples, quartered and seeded
- Cranberry Sauce (for serving)
- Chicken & Sage Jus (for serving)
Equipment:
- Baking Tray
- Roasting Rack
- Meat Thermometer
Instructions:
- Prep the Turkey:
- Remove the turkey from any plastic wrapping and place in the fridge, uncovered, overnight.
- Take the turkey out of the fridge 1 hour before cooking to bring to room temperature.
- Season and Roast:
- Preheat oven to 200°C.
- Drizzle olive oil over the turkey breast and sprinkle generously with salt and pepper.
- Place the turkey on a roasting rack set over a baking tray.
- Scatter apple quarters in the tray and pour 1-2 cups of chicken stock into the bottom of the tray.
- Cook the Turkey:
- Roast at 200°C for 30 minutes. Then, reduce oven temperature to 150°C.
- Continue to roast for 15-20 minutes per 500g, or until the internal temperature reaches 72°C on a meat thermometer.
- Rest and Serve:
- Let the turkey rest for 20-30 minutes. Remove netting with scissors, then slice into 1 cm thick pieces. Serve with cranberry sauce and Chicken & Sage Jus.
