Roast Rolled Turkey Breast with Apple and Sage Stuffing

Ingredients:

  • Rolled Turkey Breast (ours was 2.7kg)
  • Salt
  • Pepper
  • Olive Oil
  • 4 Apples, quartered and seeded
  • Cranberry Sauce (for serving)
  • Chicken & Sage Jus (for serving)

Instructions:

  1. Prep the Turkey:
  •   Remove the turkey from any plastic wrapping and place in the fridge, uncovered, overnight.
  •   Take the turkey out of the fridge 1 hour before cooking to bring to room temperature.

  1. Season and Roast:
  •   Preheat oven to 200°C.
  •   Drizzle olive oil over the turkey breast and sprinkle generously with salt and pepper.
  •   Place the turkey on a roasting rack set over a baking tray.
  •   Scatter apple quarters in the tray and pour 1-2 cups of chicken stock into the bottom of the tray.

  1. Cook the Turkey:
  •   Roast at 200°C for 30 minutes. Then, reduce oven temperature to 150°C.
  •   Continue to roast for 15-20 minutes per 500g, or until the internal temperature reaches 72°C on a meat thermometer.

 

  1. Rest and Serve:
  • Let the turkey rest for 20-30 minutes. Remove netting with scissors, then slice into 1 cm thick pieces. Serve with cranberry sauce and Chicken & Sage Jus.
